Questions That Matter:

What inspired the concept behind Águila?

Águila was created by friends Artie Burer and Antonio Rodriguez, with the concept shaped in part by Antonio’s Mexican heritage. Before opening the permanent café, the pair developed the idea through an extended pop-up at Market on South, eventually bringing the concept to a brick-and-mortar location in Orlando’s Ivanhoe Village.

Where does the coffee come from?

The coffee is sourced from Chiapas, Mexico, giving the café’s coffee program a direct connection to Mexico and reinforcing the Mexican influence behind the concept.

What are some of the signature drinks to try?

The menu includes drinks built around Mexican-inspired flavors, including Café Panela made with pure cane sugar, a spicy Mexican Mocha, and a Guava Matcha. The café also serves its own take on horchata based on a family recipe.

What kind of atmosphere does Águila aim to create?

The café describes itself around the idea of community and coffee, while its founders have emphasized a personal, eclectic approach rather than a highly polished or overly curated space. Much of the art and décor comes from the founders’ own homes and family collections, giving the space a distinctly personal character.
